Nikki shares her quick fix recipe for Tamari King Prawn Noodles

Hi everyone,

I hope you enjoyed my Raw Cranberry Cheesecake last week and didn’t eat it all at once. This recipe below is one of my favorites, I love making this when I’m in a rush and want to eat a quick and healthy dinner.

The recipe

Here is my Tamari King Prawn Noodle Recipe:

  • 50ml tamari sauce
  •  2tbsp Lucy Bee coconut oil
  • 2 tbsp lemon juice
  • 200g soba noodles (these are made from buckwheat flour so are gluten free)
  • 1/2 onion
  • 140g thin-stemmed broccoli
  • 140g sugar snap peas
  • 140g cooked prawns
  • 1 small red chilli, thinly sliced
  • Handful of chopped coriander

In a small saucepan, heat the coconut oil, add the onions and gently fry for 5 mins. Add the lemon juice and tamari sauce and bring to the boil.

In a large saucepan, bring water to the boil and cook the noodles, broccoli and peas for about 3 mins, adding the prawns for a few seconds before draining. Serve the noodle mixture onto 2 plates and drizzle the tamari sauce mixture over each plate and sprinkle with coriander. Add Black pepper to taste.

A note from Lucy

My thanks to Nikki for another tasty, eat clean recipe idea. The Tamari sauce is smoother and less salty than normal soy sauce and can be bought gluten free too, making this meal ideal for those following a gluten and lactose free diet.
