To Start Your Day – Oil Pull & A Morning Tumeric Booster

Breakfast – Lucuma Chia Pudding

Ingredients (Serves 2)

  • 300ml almond milk
  • 8 dates, pitted
  • 1 tsp Lucy Bee Lucuma Powder
  • ½ tsp. vanilla extract
  • 4 ½ tbsp. chia seeds
  • a handful of berries, to serve (may have to be frozen)

Method 

  • Soak the dates in the almond milk for 1 hour, then add the Lucy Bee Lucuma Powder and vanilla extract. Blitz in a food processor until smooth.
  • Add the chia seeds and stir well. Divide between glasses and leave to set in the fridge for at least 3 hours, but preferably overnight. Top with berries before serving.

Lunch – Teriyaki Prawns and Courgetti

Ingredients (serves 2)

  • 1 tsp. Lucy Bee Coconut Oil
  • 1 pepper, chopped
  • 1 garlic clove, chopped
  • 8 closed cup mushrooms, chopped
  • 1 courgette
  • 200g prawns
  • 1 tsp. chilli flakes
  • 2 tbsp. teriyaki sauce (gluten free)

Method

  • Melt the Lucy Bee Coconut Oil in a pan and add in the peppers and garlic. Cook for 2-3 minutes.
  • Add in the mushrooms and cook for a further 1-2 minutes.
  • While they are cooking, spiralise the courgette and set aside.
  • Add in the prawns, chilli flakes and teriyaki sauce and stir everything together. If using raw prawns, make sure they’re cooked through.
  • Finally, stir in the courgette, mix together and serve.

Snack – Lucy Bee Energy Balls with Maca Powder

Ingredients  (Makes 20 balls)

  • 150g almonds
  • 150g dried figs
  • 150g dried dates
  • 1 tbsp. Lucy Bee Coconut Oil, melted
  • 1 tbsp. desiccated coconut
  • 1 tsp. Lucy Bee Maca Powder
  • ½ tsp. spirulina (optional)

Method

  • Preheat the oven to 180C, 350F, gas mark 4.
  • Place the almonds on a baking sheet and bake for 7 to 10 minutes, until nicely toasted. Remove and set aside to cool.
  • Once cool, whiz all ingredients together in a food processor until they start to stick together.
  • Form the mixture into 20 balls. They keep well stored in the fridge in an airtight container.

Dinner – Chilli Chicken Stuffed Peppers

Ingredients (Serves 2)

  • 100g brown rice
  • 1 fresh red chilli, thinly sliced
  • 2 cloves of garlic, crushed
  • 1 tbsp. Lucy Bee Coconut Oil
  • 1 red onion, finely chopped
  • 1 courgette, thinly sliced and cut into half
  • 2 chicken breasts, cut into small pieces
  • 400g tinned chopped tomatoes
  • A handful of spinach
  • 8/10 pitted green olives
  • A handful of fresh basil
  • 6 peppers, deseeded

Method

  • Preheat the oven to 180C, 350F, gas mark 4.
  • Start by cooking your rice as per the packet instructions (around 25 minutes).
  • Add the garlic, chilli and Lucy Bee Coconut Oil to a frying pan and gently fry for 1 minute.
  • Add the courgette and onion and continue to cook until golden.
  • Add the chicken breast and cook until the chicken is cooked through.
  • Transfer the ingredients to a saucepan, add your tinned tomatoes, spinach, olives, basil and cooked rice and simmer for 25/30 minutes at a medium heat.
  • When ready, slice the top from each pepper and retain. Stuff your 6 peppers with the mixture. Use the top of the pepper as a lid and bake in the oven for 10 minutes. Serve immediately. Enjoy!

 Post-dinner – Lucy Bee Turmeric Latte

 Ingredients (Serves 1)

  • 1 tsp. Lucy Bee Turmeric Powder
  • 1 tsp. Lucy Bee Coconut Oil
  • 1 tsp. Lucy Bee Cinnamon Powder (plus extra for dusting)
  • 250ml almond milk (see our recipe to make your own)
  • 1 tsp. agave syrup

Method

  • Add all ingredients to a heavy based saucepan and warm gently on a medium heat until warmed through. Add to a blender and whiz.
  • Top with a dusting of Lucy Bee Cinnamon Powder.
