Welcome to Day 7 of Lucy’s Clean Eating Guide

Who said that pasta can’t be healthy?! We’ve got a lovely dinner recipe today using brown rice pasta that is so quick and easy to whip up. We are also looking forward to our morning bowl of porridge for a warming start to the day.

Breakfast – Porridge with Maca Powder and Honey

Porridge with Lucy Bee Maca Powder.

Ingredients (Serves 1) 

  • 120g gluten free oats
  • 250ml almond milk
  • 1 tsp. Lucy Bee Maca Powder
  • 1 tsp. Lucy Bee Coconut Oil
  • 1 tbsp. honey
  • 1 tbsp. milled flaxseeds
  • Handful of blueberries to serve
  • Almond flakes to serve
  • Pumpkin seeds to serve

Method

  • Add the oats, almond milk, Lucy Bee Maca Powder and Lucy Bee Coconut Oil to a pan and cook gently for 5 minutes or until the oats are cooked.
  • Stir in the flaxseeds and honey.
  • Top with blueberries, almond flakes and pumpkin seeds.

Lunch – Leftover Dhal with Lucy Bee Cinnamon Powder and Grilled Chicken

Dhal With Lucy Bee And Cinnamon

Ingredients (Serves 4)

I’ve included this recipe here again in case you missed day6 of the Guide which first included this.

  • 1 tsp. cajun spice
  • 1 tsp. Lucy Bee Coconut Oil, melted
  • 2 chicken breasts, cut into small pieces
  • 250g split red lentils
  • 1 cinnamon stick
  • 1 tsp. Lucy Bee Turmeric Powder
  • 1 tin of coconut milk
  • 2 tbsp. Lucy Bee Coconut Oil
  • 1 onion, chopped
  • 3 cloves of garlic, chopped
  • 1 thumb-sized piece of ginger, grated
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 2 tsp. mustard seeds
  • A large handful of spinach
  • 1 tin of chopped tomatoes
  • Pinch of Lucy Bee Himalayan Salt
  • 4 grilled chicken breasts

Method

  • Put the cajun spice, Lucy Bee Coconut Oil and chicken breasts into a Ziplock bag and mix them together. Leave to marinate while you make the dhal.
  • Place the lentils in a large saucepan with 1 litre of water, the cinnamon stick and Lucy Bee Turmeric Powder and bring to the boil, then simmer for about 30 minutes until the lentils are cooked.
  • Add the coconut milk and continue to simmer for 10 – 15 minutes until it thickens, then remove from the heat.
  • In a separate pan, melt the Lucy Bee Coconut Oil and sauté the onion until soft before adding the garlic and ginger for a further few minutes.
  • Add the cumin, coriander and mustard seeds. Place a lid over and gently sauté until the mustard seeds stop popping.
  • Add the spinach and tinned tomatoes, stir well and simmer for a further few minutes, allowing the flavours to blend together.
  • Pour this spinach /tomato mixture into the dhal, stir well and season with Lucy Bee Himalayan Salt.
  • Meanwhile, cook the chicken breasts through and serve with the dhal.

Snack – Lucy Bee Energy Balls with Maca Powder

 Ingredients (Makes 20 balls)

  • 150g almonds
  • 150g dried figs
  • 150g dried dates
  • 1 tbsp. Lucy Bee Coconut Oil, melted
  • 1 tbsp. desiccated coconut
  • 1 tsp. Lucy Bee Maca Powder
  • ½ tsp. spirulina (optional)

Method

  • Preheat the oven to 180C, 350F, gas mark 4.
  • Place the almonds on a baking sheet and bake for 7 to 10 minutes, until nicely toasted. Remove and set aside to cool.
  • Once cool, whiz all ingredients together in a food processor until they start to stick together.
  • Form the mixture into 20 balls. They keep well stored in the fridge in an airtight container.

Dinner – Tomato and Anchovy Sauce Pasta

Ingredients (serves 4)

  • 1 tsp. Lucy Bee Coconut Oil
  • 2 garlic cloves, finely chopped
  • 1 x tin anchovy fillets
  • Big bunch parsley, chopped
  • 1 x 400g tin chopped organic tomatoes
  • Lucy Bee Himalayan Salt and freshly ground black pepper
  • Handful of grated parmesan (optional)
  • 400g brown rice pasta – we use Rizopia

Method

  • In a heavy based saucepan add the Lucy Bee Coconut Oil, anchovies plus oil and garlic. Sauté until the anchovies have broken down and garlic just lightly coloured.
  • Stir in the parsley, salt and black pepper.
  • Stir in the tomatoes and cook uncovered over lowest heat for at least 30 minutes, stirring occasionally – I often put mine into the oven on a very low setting.
  • While the sauce is cooking, prepare your pasta as per the packet instructions.
  • Stir the pasta into the sauce before sprinkling over with parmesan, if required.

The Classic

Ingredients (serves 1)

  •  1 tbsp. Lucy Bee Cacao Powder
  •  250ml milk
  • 1 tsp. Lucy Bee Cinnamon Powder to sweeten, optional

Method

  • Place all ingredients into a heavy based saucepan and warm gently on a medium heat, until the almond milk is heated through, stirring occasionally.
  • Whiz together in a blender.

Dairy Free

Ingredients 

  • 1 tbsp. Lucy Bee Cacao Powder
  • 250ml almond milk
  • 1-2 tsp. coconut milk (optional)

 Method 

  • Place all ingredients in a blender and whiz up.
  •  Add to a heavy based saucepan and warm gently on a medium heat, stirring occasionally.
