Day Seven – Seven Day Guide To Feel Your Best In The New Year

Breakfast –  Parsnip, Carrot and Thyme Rosti

Ingredients

  • 2 carrots, chopped
  • 2 parsnips, chopped
  • ½ onion, chopped
  • A handful of fresh thyme
  • 1 egg for the mixture plus 4 eggs to serve (poached)
  • 2 tbsp. Lucy Bee Coconut Oil
  • A pinch of Lucy Bee Himalayan Salt and ground black pepper

Method

  • Add the carrot and parsnip to a saucepan with hot water and a pinch of salt. Bring to a boil and simmer for 8-10 minutes until vegetables are soft.
  • In a separate pan, sauté the onion with 1 teaspoon of Lucy Bee Coconut Oil until golden.
  • Drain the carrot and parsnip then mash together using a potato masher.
  • Add the onion, thyme and crack the egg into the mix, stir together then divide into four and make rosti/pattie shapes. Melt the remaining Lucy Bee Coconut Oil in a frying pan and spoon in your patties. I find using a big spoon helps to form neat round ‘burger’ shapes. Fry each rosti for 2/3 minutes each side on a medium heat but be careful not to burn.
  • Enjoy with a poached egg on a bed of spinach for a nutritious lunch!

Drink of the day – Lucy Bee Hot Chocolate

Lunch – Miso Baked Aubergine with Ginger

Ingredients

  • 1 aubergine
  • 1/2 red chilli
  • 3 – 4 spring onions, chopped
  • A pinch of Lucy Bee Himalayan Salt and ground black pepper
    FOR THE PASTE:
  • 1 tbsp. Lucy Bee Coconut Oil, melted
  • 1 tsp. miso paste
  • 1 tbsp. tahini
  • 1 tsp. fresh ginger, grated
  • Juice of 1/2 lemon

Method

  • Preheat the oven to 180C, 350F, gas mark 4.
  • Make the paste first, by mixing all ingredients together in a bowl. Set aside.
  • Slice the aubergine into two and score the inside flesh to make a ‘grid’ using a sharp knife.
  • Drizzle the paste over making sure it’s evenly spread between the 2 halves of aubergine.
  • Sprinkle the chilli, spring onions and seasoning over the aubergine and bake for around 30 minutes – the paste should have caramelised and the flesh be deliciously soft.
  • Serve with lemon juice squeezed over.

Ingredients

FOR THE NACHOS:

  • 1/2 tbsp. Lucy Bee Coconut Oil, melted
  • 3 sweet potatoes, washed and scrubbed, skins on
  • 1/4 tsp. Lucy Bee Himalayan Salt
  • 1/2 tsp. paprika
  • 30g cheddar cheese, grated
    FOR THE SALSA:
  • 150g cherry tomatoes, chopped
  • 1/2 red onion, finely chopped
  • 1/4 tsp. Lucy Bee Himalayan Salt
    FOR THE GUACAMOLE:
  • 1 avocado
  • 1/4 tsp. Lucy Bee Himalayan Salt
  • 1/2 red onion

Method

  • Preheat the oven to 160C, 300F, gas mark 2.
    FOR THE NACHOS:
  • Lightly brush an oven tray with Lucy Bee Coconut Oil.
  • Carefully slice the sweet potatoes to approximately 1mm thick.
  • Lay the sweet potatoes onto the tray and sprinkle with Lucy Bee Himalayan Salt and paprika. Bake for 5 minutes. Remove from the oven and turn it up to 180C, 350F, gas mark 4. Sprinkle over with cheese and pop back in the oven until crispy (I found about 8 minutes worked for mine).
    FOR THE SALSA:
  • While the sweet potatoes are cooking, make the salsa: add the tomatoes, red onion and
  • Lucy Bee Himalayan Salt to a bowl and mash slightly to soften, then set aside.
    FOR THE GUACAMOLE:
  • Put the avocado into a bowl and mash then add the Lucy Bee Himalayan Salt, red onion and coriander and mix together.
  • Once the nachos are cooked, switch the oven off, take out the nachos, cover with the grated cheese and return to the oven to allow the cheese to melt. Finally, build your nachos with the salsa and guacamole.
  • Tip: Try adding some chillis if you like a little heat!

Beauty Tip of The Day – Hydrating Face Mask

Ingredients

  • Half an avocado / about 2 tbsp.
  • 1tsp. honey
  • I tsp. Lucy Bee Coconut Oil, melted

Method

  • Mash the avocado into a bowl, then add the honey and melted Lucy Bee. Mix together well.
  • Apply to face and neck – Leave for 15/20 minutes before washing off.

•  Honey – a humectant which means it draws moisture from the air into the skin, making this is an important role in hydrating the skin.

•  Lucy Bee Coconut Oil – high in vitamin E, very nourishing and hydrating for the skin.
